  • B.L.T. Lobster Roll

    Ingredients

    • 1 ½ pounds cooked lobster meat
    • 6 slices bacon (about 6 ounces), cooked until crispy, chopped
    • ½ cup lemon aioli (see Lemon Aioli recipe)
    • 2 tablespoons finely chopped yellow onion
    • 1 tablespoon finely diced celery
    • 1 tablespoon finely diced fennel bulb
    • 1 tablespoon finely chopped Italian parsley leaves
    • Fine sea salt and freshly ground black pepper
    • 1 egg, lightly beaten
    • 6 hot dog buns
    • 12 cherry tomatoes, halved
    • 1 cup arugula
    1. Preheat the oven to 400°F.
    2. Combine the lobster, bacon, Lemon Aioli, onion, celery, fennel, and parsley in a bowl and gently mix. Season with salt and pepper.
    3. Lightly brush each hot dog roll with the egg and season with salt. Bake in the oven until golden, 3 to 4 minutes.
    4. Fill each hot dog bun with the lobster salad. Garnish with cherry tomatoes and arugula and serve immediately.
