B.L.T. Lobster Roll
Ingredients
- 1 ½ pounds cooked lobster meat
- 6 slices bacon (about 6 ounces), cooked until crispy, chopped
- ½ cup lemon aioli (see Lemon Aioli recipe)
- 2 tablespoons finely chopped yellow onion
- 1 tablespoon finely diced celery
- 1 tablespoon finely diced fennel bulb
- 1 tablespoon finely chopped Italian parsley leaves
- Fine sea salt and freshly ground black pepper
- 1 egg, lightly beaten
- 6 hot dog buns
- 12 cherry tomatoes, halved
- 1 cup arugula
- Preheat the oven to 400°F.
- Combine the lobster, bacon, Lemon Aioli, onion, celery, fennel, and parsley in a bowl and gently mix. Season with salt and pepper.
- Lightly brush each hot dog roll with the egg and season with salt. Bake in the oven until golden, 3 to 4 minutes.
- Fill each hot dog bun with the lobster salad. Garnish with cherry tomatoes and arugula and serve immediately.
